Guest Toastie 03: Sophie Wyburd’s Ricotta and Pistachio Pesto Toastie
The Drop and Two Drops have collaborated with cook and author Sophie Wyburd to create a ricotta, mozzarella, lemon zest and pistachio pesto toastie, running at both bars from Tuesday 1st April to Saturday the 31st of May, just in time for spring.
Sophie Wyburd is a cook, recipe writer and presenter from South London, with a specialism in simple, hearty comfort food. Formerly heading up the food team at Mob, you can now find her recipes in her debut cookbook Tucking In: A Very Comforting Cookbook, and in her bestselling newsletter, Feeder. Sophie’s recipes have been featured in The Times, Olive Magazine and Sainsbury’s Magazine, and she has appeared on Saturday Kitchen as well as Jamie Oliver’s Channel 4 show, whilst also hosting popular supper clubs in London. She says of her toastie:
“This toastie is inspired by the fresh flavours of spring. I love the combination of bright, lemony pistachio pesto with sweet and creamy ricotta, and it may sound like an unconventional toastie filling, but I promise you it works. Toasties are unbeatable for a speedy, comforting meal, and I really think we should be putting more condiments and sauces like pesto into them for flavour. The pesto here brings a freshness often lost in cheese toasties, but without sacrificing on indulgence, which you very much get from the oozy cheese.”
