Guest Toastie 08: Ana Da Costa’s Cheesy Bifana Toastie
The Drop and Two Drops are thrilled to announce a toastie collaboration with the cook, recipe developer and founder of FAT TEA, Ana Da Costa.
Available from Tuesday 3rd March to Thursday 30th April, Ana’s toastie – a Cheesy Bifana – is the 8th in their guest toastie series.
Taking inspiration from her heritage, Ana’s Cheesy Bifana Toastie is her version of the tradition Portuguese bifana: slices of pork shoulder marinated in garlic, white wine and spices, wedged between sourdough with oozing cheese, piri piri sauce and mustard. The sandwich is served with a handful of matchstick fries and pot of the rich, savoury bifana sauce, for dipping. Ana Da Costa says:
“I knew without a doubt I wanted to make a bifana toastie when I was asked to do this collab with The Drop, there’s many styles of bifanas in Portugal, mine is always saucy and messy to eat, as it should be.”
